“  要知道,在我们这嘎地儿,不是每天都去买菜,对于烹调材料,有时会或缺或少,这不打紧,我们可以就着冰箱的材料,创意搭配,只要是健康的,相互之间配伍不产生毒素、损害人体的,就可以了,俺这碟菜,有罐头的、在干货水发的,也有新鲜菜,这里一把,那里一撮的,很是过瘾。材料刚好有八种,故名之八珍斋。”

清炒八珍斋的做法步骤
1把冬菇、木耳水发,冬菇、木耳去蒂,冬菇、蘑菇切成块、木耳摘成小块、荷兰豆撕去头尾和周边的筋、红萝卜切片、大白菜梗切块,将罐头的材料滤水;
2锅置炉上,开火,把水烧开,再放盐约1茶匙、沙拉油1茶匙,放入大白菜梗、红萝卜和荷兰豆,过一过烧开的水,用笊篱捞起;
3不用换水,再把水烧开,倒入竹笋、蘑菇和玉米芯,去一去罐头气味,一过水便可捞起;
4倒入冬菇、蘑菇,水一开即捞起;
5再把水烧水,倒入木耳,让水烧开一小会,再捞起木耳;
6把锅洗净,放约沙拉油1/2大匙,再倒入木耳、冬菇稍煸干;
7重新开锅,锅热放油,放几片姜;
8倒入全部材料,兜几下,点入精盐和适量糖,撒几下胡椒粉,再喷入或在锅边淋入料酒,快速兜均匀即可。
一、在焯水时放适量盐,是让材料有点底味,放适量油,是增添材料的光泽;
二、在焯水时,我们想省些燃料可功夫,锅里不经常换水,我们可以分几个步骤焯水,首先,可以把气味不太浓的或不会令水太脏的先焯,如荷兰豆、红萝卜和大白菜梗等;
三、罐头的食物,有点罐头味,稍焯水便可,不用到水开才捞起;
四、冬菇和蘑菇,在焯水的过程中会变色,所以,最好放在稍后的步骤;
五、最后说木耳,它偶尔会有沙沉底,所以,就放在最后焯水了;
六、以上材料焯水后,不要炒得过久,因为在焯水时都基本熟了,猛火稍爆炒即可。

玉米芯颗粒菌种制作方法
玉米芯颗粒菌种较木屑菌种具有接菌迅速、菌丝浓白、生长粗壮、活力强、萌发点多的优点。较谷粒菌种具有成本低、耐保藏的特点,成本是谷粒菌种的二十分之一。      1、原料选择。脱粒玉米棒粉碎过筛,去粗去细。留黄豆粒大小颗粒备用。      2、浸泡颗粒。将玉米芯颗粒装入110×75厘米的编织袋,放流动水?河湖?中浸泡3-5天。静水浸泡需每天换水一次。      3、培养料配制。玉米芯79%、麸子15%、木屑5%、石膏1%,含水量55%。      4、装瓶。应将瓶颈处用毛球压实。使培养料上紧下松。      5、高温灭菌。待温度升高至100℃时?保持锅内恒温6-8小时。   6、变温培养。1-5天温度控在25℃-28℃。5-15天温度控制在22℃-24℃。15天后温度控制在22℃左右。
&&&& 优质菌种萌发快,吃料快,抗逆性强,产量高,我们利用玉米芯生产颗粒菌种,并应用于平菇菌种生产,取得了较好效果。现简要介绍如下。 1供试配方 平菇:玉米芯(花生大的颗粒,下同)78%,麦麸20%,食盐、石膏各1%。 2装料灭菌 把粉碎好的玉米芯用3%的石灰水泡12小时(水面超过料面3cm以上)。捞出凉至表皮略见干燥,这时pH8~7,高温灭菌后下降到pH7~6。处理好的玉米芯加入各种辅料、拌匀装袋(14×30cm,18×40cm)灭菌。
玉米芯颗粒原种的制作   先将脱粒玉米芯(干燥无霉变)的粉碎,在风里扬一下,去掉灰尘和细末,然后将玉米芯颗粒装入编织袋,放入流动水(河湖)中浸泡3~5天,静水浸泡需每天换水一次;培养料的配方为玉米芯78.5%、麸子15%、木屑5%、石膏1%、白灰0.5%,含水量60%。制作时先将玉米芯捞出沥水,与锯末麸子混合拌料,含水量用干锯末和干麦麸调节,最后用筛子筛,掉过大颗粒就可以了。
粉碎玉米棒下脚料制平菇菌种
&&&&& 选用玉米棒在粉碎过程中未粉碎的呈黄豆粒大小的玉米芯和碎玉米粒,培养平菇原种、栽培菌种、效果甚佳。现将具体做法简述如下。
1.原料精选&&将未充分粉碎的玉米芯和玉米小颗粒收集风选,剔除灰尘、须等杂物,过大颗粒用粗筛筛选去,细小颗粒尖末用细筛筛滤,&保留绿豆至黄豆大小的颗粒曝晒后收藏备用。
2.制作方法&&先将玉米芯和碎玉米颗粒用1%的糖水浸泡2~4&小时,使其吸足水分,捞出控水至含水量60%~65%,待表面略干无水迹时,&加入0.5%~1%石膏粉或碳酸钙粉,拌匀后装瓶培养料最多装至瓶肩,不可装太满,用棉塞或薄膜加牛皮纸封口,高压灭菌1.5~2小时,或常压灭菌10~02小时,灭菌后乘热扣瓶冷却,常规法接种,适温培养,&待菌丝封满料面后摇瓶一次,以加快发菌速度。菌种瓶、盐水瓶、酒瓶15-20天满瓶,罐头瓶10-15天满瓶,菌丝洁白粗壮,培养期短,污染率低。
3.结论&&①用上述原料制平菇菌种,是玉米棒在粉碎过程中未粉碎的不能作饲科的下脚科,变废为宝易收集,可节约大量麦粒、&玉米等粮食,降低制种成本。②制作过程中省去了制麦粒、玉米、&谷物等颗粒菌种的煮沸过程,省工省时省燃料,初学制颗粒种者容易掌握。&③用该原料培养菌种与麦粒等粮食制作的颗粒种质量相近,且不会遭鼠害,&可减少栽培过程中由鼠害所造成的污染损失。
