土豆经过一个时期的贮存，在一定的温度等条件下，顶芽及腋芽很容易萌发。发芽时，在出芽的部位产生许多酶，经过这些酶的作用，块茎中贮存的物质便被分解，然后转变为供应芽生长的物质。在这个物质转化过程中，产生一种叫做“龙葵精”的毒素，这种毒素进入体内，人就会出现恶心、呕吐、头晕和腹泻等中毒症状，严重时还会造成呼吸器官麻痹而死亡。

我们要分为两方面来看待这个问题:发芽土豆不是绝对不能吃，但是要看发芽多大？发芽的部位是局部还是全部。
&&那么，发了芽的土豆是不是就不能吃了呢?人们经过反复试验证明：当土豆的芽生长不大，又经过一定的处理以后还是可以吃的。因为毒素是由于芽的萌发而形成的，所以毒素的累积以芽眼为中心，当芽还小的时候，毒素还没有扩散开，只要将芽及芽眼挖掉一块就行了。芽稍大些的土豆，毒素已经扩散，而扩散的部位首先是皮层，所以对这种土豆，除了在芽眼部位挖去一块外，还应在其附近削去一块。
　另外，各个芽并不是同时萌发的，一般是顶芽首先萌发，靠近顶芽的腋芽次之，其他部位的芽萌发较晚。如果顶部的芽长得较大，其他的芽还没有萌发，将顶部切除即可。
　发芽的土豆虽经上述处理，仍会残留一部分毒素，所以还应在水中多泡一些时间，使毒素再溶解掉一部分，加热时再多煮一会儿。这样处理后一般就不会发生中毒了。如果芽长得太大，那就不能吃。削下来的东西如果用来喂牲畜，也必须经水浸泡和水煮，否则牲畜吃了也会中毒。
&&但是如果发芽的地方偏多且发芽偏大。一定要注意：用什么办法都无法消除毒素了。所以千万不能使用。
