饺子，又名“饺饵” 是中国的古老传统面食之一，相传是中国东汉南阳医圣张仲景发明的，距今已有一千八百多年的历史了。饺子深受中国广大人民的喜爱，有句民谚：“舒服不如倒着，好吃不如饺子。” 今天就和大家说说饺子的那些事！
饺子皮攻略 和面
使用小麦粉（或饺子粉），有的地方用荞麦粉。用凉水。面与水的比例：四碗面，一碗水。在盆中揉成面团后，放置20分钟，让面团“醒醒”（水充分的渗入面粉颗粒）。水偏多，和好的面偏软，容易包，但煮的时候易破。水偏少，面硬，擀皮费事，包亦费劲。好的口感一般要求面要和的硬一些，有软饼硬饺子之说。 擀皮儿

煮饺子技巧 煮
锅中放清水，旺火烧开后，放入生饺子，一边放一边搅动，以防粘锅。沉在锅下部的饺子层的高度与其上面的水层的厚度，以不超过3:2为宜。饺子过多，易破。加锅盖。整个过程保持旺火。水又开锅，此时饺子应当都漂在水面，加少许凉水，使翻滚的汤终止翻滚，搅动。水又开，再加少许凉水，搅动。水再开，即可用漏勺把饺子捞出。判断是否煮熟的方法：用手指按一下皮儿没有破的饺子肚，离开后又鼓起，熟了。 饺
